Introduction

The winter festivities are never complete without an amazing Glühwein or mulled wine. In this edition of the Enotri Kitchen we share our favourite recipes as well as a couple additional additives that we love in our mulled wine. This is a very special recipe in the way that there are so many different things you can do that suit your own personal tastes, red or white wine, oranges, honey and so many choices of liqueurs that can make your recipe just that extra special to you.

Wine Choices

Most traditional Glühweins are made with a red wine, however we are experimenting with both a red wine choice as well as a white wine. Our choices were made when we looked in our cellar of what is on hand rather than an exact wine, any enotri wine will do no matter the region, grape, year, or alcohol content. As we say in every recipe the choice of wine is subject to your own personal tastes and there is no wrong answer, These recipes are simple and delicious with any wine that you have on hand.

Recipe

Red Wine :

We have chosen a beautiful Beaujolais wine for our red wine choice, from Lucien Lardy the Morgon Côte du Py. Côte du Py is considered to be the premium vineyard site in Morgon. This wine displays a deep garnet red robe. A very complex wine, powerful and fleshy, and mineral notes. The finish is very velvety and persistent. Elegant and extremely well structured.

White Wine :

We have chosen a new wine for us at Enotri, an elegant German Riesling from Brüder Eser, St. Nikolaus Riesling Spätlese. The last vineyard harvested of the year is in St. Nikolaus. This wine is a great example of the style of late harvested Riesling wines that made the Rheingau region world famous. Low in alcohol, it has animating fruit and well-integrated sweetness, brought into perfect harmony by a fine acidity

Ingredients

1 Bottle of Red or White wine (750 ml)

5 Whole Cloves

1 Orange

3 Cinnamon sticks

3/4 Cup Sugar

Desired Liqueur

Possible Additives :

  • Cranberries

  • Rosemary sprigs

  • Star anise

  • Honey (sugar substitution)

  • Liqueur (Amaretto, Schnapps, Kahlua, etc.)

  • Citrus or Juices

  1. Use a vegetable peeler to peel 3-4 strips of zest off half of the orange. Slice the remaining half into thin rounds and set aside for garnish.

  2. In a medium saucepan over medium heat, combine the red or white wine, sugar , and the juice from the zested ½ orange. Add the orange zest, cloves, cinnamon sticks, and any other additives. Bring to a simmer, then reduce the heat and simmer on low for 20 to 30 minutes. Be careful not to let it come to a boil.

  3. Stir in any Liqueurs, if using. Taste, and if you like your mulled wine sweeter, add more sugars or juices. If you like it more spiced, add more whole spices and simmer for 15 more minutes with any additions.

  4. Remove from the heat, strain, and pour into a pitcher or mugs. Serve with the reserved orange rounds and cinnamon sticks. Garnish with rosemary sprigs and cranberries, if desired.
